Cinnamon spiral cookies



 
I have some crazy cravings at times. I crave a heavily spiced masala bun and at times a strongly chocolate flavoured bite at other times. At times I get the incredible urge to eat something very cinnamony.
Last weekend was one such occasion. I had to have something with a strong taste of cinnamon in it.

So these cookies were born. I made another batch of dough using the remaining egg yolk. You can check out the post here.
Here goes the cinnamon blast...
Ingredients:
Flour - 1 1/4 cup
Powdered Sugar - 1/2 cup
Butter - 7 tbsp
Egg yolk - 1/2
Vanilla essence - 1/2 tsp
Cream - 1 tbsp (I used 1tbsp milk)
Salt - 1 pinch.
Egg white - 1

For the filling:
Cinnamon powder - 1 tbsp
Powdered Sugar - 1/4 cup

Method:
You can see that this is the basic cookie dough from my previous post.

Mix the flour and sugar. Cut the cold butter into the flour-sugar mix. Mix with hands until the dough resembles a crumbly mixture.

Whisk together yolk, vanilla essence, cream and salt. Add the liquid to the flour-butter mix and knead softly into a dough.

Wrap the dough in parchment or wax paper and refrigerate for 20-30 minutes.

Pull out the refrigerated dough and on a lightly floured surface, roll the dough out to form a large rectangle about 3 mm thick.

Cover the rectangle with another piece of parchment and return the dough to the refrigerator for 10-20 minutes.

Pull out the rectangular dough from the refrigerator and apply egg-white on the surface using a pastry brush.

Mix the cinnamon powder and sugar in a bowl. Sprinkle the cinnamon-sugar generously on the rectangle, covering the entire surface of the dough.

Roll the dough into a log. Seal the edges well. Wrap the log in the parchment paper and return to the refrigerator for 20 minutes.

Verdict: These are incredibly buttery, crumbly cookies; the dash of cinnamon sugar takes them to a whole different level. Add the spiral pattern in this equation and as a baker you are extremely satisfied and so are those that taste these!
